Pineapple Cookies

I'm here to share with you how to do Pineapple Cookies and before it, this is the picture of it:

First of all, I’ve gone to most of the shops, looking for delicious and Pineapple cookies, but it upset me—SO EXPENSIVE!!! I won't splurge for this tiny bits because my mum knows how to do it! Hahaha!!!




This is the ingredient: (for 200 serving)
600g of wheat flour
400g of butter or margarine
4 eggs
160g of sugar
1 tablespoon of salt
Two fresh lemons
One packet of pineapple paste looks like this: (You can buy it in the bakery shops)





Steps:
Mix the wheat flour, butter or margarine, eggs(only 2), sugar and salt together using your clean hand until like this: (Don’t mix it too hard and not too long time, if not the paste will be very oily.) This is to make the outer-layer-paste.

P/s: If the paste turned oily, try add some flour (little by little)


Then, put the paste to the top of the fridge for about 30 minutes (to cool down the paste, so that the paste won’t be oily.)

While waiting for the paste to cool, take the pineapple paste and mix it with the lemon juice that we have squeezed it out. Mix it thoroughly.

After mixing, cut the pineapple paste into ball-shape like this: (4 grams each)


After we have done, take the outer-layer-paste out from the fridge.

Cut the outer-layer-paste into ball-shape like this: (5 grams each)




Wrapped the outer-layer-paste SOFTLY with the pineapple paste like this:(Make sure you don’t press the outer-layer too hard. If not, it will be oily again)






Using clean silver scissors cut the pineapple shape like this:




Put the product on the tray.



In the meantime, remember to turn on the oven (upper and lower) for 180°C to heat up the oven.

Then, pour the remaining two eggs into a small bowl, take away the egg yolk, leaving the egg white.

Add two dots of yellow colouring (optional) into the egg white.

After putting the product on the tray, apply a thin layer of egg white mixture on top of the products. This will make the cookies look more attractive after baking.

Then, put the tray in the oven on the second floor counting from the top.


It will be done in around 20 minutes, but I suggest keeping an eye on it all the time to make sure it is done.

It will appear golden-yellow in colour once it is ready to take out from the oven. So, be alert all the time!
